A favorite from my Corpus Christi,Texas, friend, Lillian Murray, an experienced hostess, having spent many years hosting parties at conventions throughout the United States that were held by her family\u2019s insurance company.<\/p>\n\n\n\n<p>Makes 1 Large or 2 Small Balls<\/p>\n\n\n\n<p>6 ounce Roquefort or bleu cheese, at room temperature<br>10 ounce very sharp, crumbly cheddar cheese, finely grated, at room temperature<br>12 ounce cream cheese, at room temperature; or dripped plain yogurt<br>1 small onion, grated<br>1 tablespoon Worcestershire sauce<br>1 teaspoon cayenne pepper, or to taste<br>1\u00bd cup pecans, finely chopped<br>1\u00bd cups parsley, stemmed and minced<\/p>\n\n\n\n<p>Place cheeses in a large bowl with onion, Worcestershire, and cayenne pepper. Add \u00bd cup each of nuts and fresh<br>parsley; reserve remainder. With your hands, blend all thoroughly. NO PROCESSOR! Shape into 1 large or<br>several small balls; place each in a small bowl lined with plastic or aluminum foil. Refrigerate over night. Before<br>serving, roll balls in a mixture of remaining parsley and pecans.
