{"id":615,"date":"2021-04-09T02:39:33","date_gmt":"2021-04-09T02:39:33","guid":{"rendered":"https:\/\/cooking-peppers.ts-d.net\/?p=157"},"modified":"2025-12-05T01:38:39","modified_gmt":"2025-12-05T01:38:39","slug":"tomato-and-orange-gazpacho","status":"publish","type":"post","link":"https:\/\/cursearch.atspace.cc\/index.php\/2021\/04\/09\/tomato-and-orange-gazpacho\/","title":{"rendered":"TOMATO AND ORANGE GAZPACHO"},"content":{"rendered":"\n<p>A refreshing, yet satisfying summertime soup that is best made the day before so that flavors are enhanced and it becomes well-chilled.<\/p>\n\n\n\n<p>Makes 5 Cups<\/p>\n\n\n\n<p>1 14-ounce can diced tomatoes (petite if available)<br>\u00bd cup fresh orange juice<br>1 garlic clove, peeled and minced<br>2 tablespoons white wine vinegar<br>\u00bc cup croutons or dried French type bread<br>2 teaspoons salt<br>2 tablespoons olive oil<br>1\u00bd teaspoons orange rind, grated<br>2 navel oranges, peel and pith cut away, fruit segmented and chopped coarsely<br>\u00bd cup cucumber, peeled, seeded, and finely chopped<br>\u00bd cup red Bell Peppers, stemmed, seeded and finely chopped<br>\u2153 cup red onion, peeled, finely chopped and soaked in cold water for 15 minutes, drained<br>Cayenne pepper to taste<br>Freshly ground black pepper to taste<\/p>\n\n\n\n<p>In a blender or processor put one half of the tomatoes, reserve other half. Add orange juice, garlic, vinegar, croutons,<br>salt, oil, orange rind, and oranges; pur\u00e9e. Transfer pur\u00e9e to a bowl; add remaining tomato, cucumber, Bell Pepper, onion, cayenne, and black pepper; stir to mix.<br>Cover and chill until very cold.
