One of my favorites.<\/p>\n\n\n\n<p>Makes 4 to 6 Servings<\/p>\n\n\n\n<p>2 bunches fresh spinach, preferably baby sized leaves; stemmed, washed and well-dried (about<br>2 quarts or 2 packages of prepared salad spinach)<br>1 pint fresh blueberries or raspberries, do not mix<br>\u2154 cup bleu cheese, crumbled (fatty but tasty)<br>\u00bd cup pecans or walnuts, toasted and coarsely chopped<\/p>\n\n\n\n<p>Toss all together and set aside.<\/p>\n\n\n\n<p><strong>Berry Vinagrette<\/strong><br>\u00bd cup fresh blueberries or raspberries<br>1 shallot, minced<br>\u00bd teaspoon salt<br>\u00bc teaspoon cayenne pepper<br>1\u00bd teaspoon granulated sugar<br>3 tablespoons raspberry vinegar<br>\u00bd cup vegetable oil<\/p>\n\n\n\n<p>Combine berries, shallots, salt, cayenne, sugar, vinegar, and oil in a blender; pulse until smooth.
