Reservar la piel\u00a0<br>2 cucharas de aceite de oliva<br>2 cucharas de salsa soja clara<br>1 cuchara de xaoxing wine<br>1\/2 cuchara de aceite de s\u00e9samo<br>40 grs de jengibre picado fino, brunoise<br>Sal y pimienta<br>1\/2 cebolla roja cortada delgada en juliana<br>Culantro<br>Aj\u00ed amarillo -opcional-<\/p>\n\n\n\n<p>Preparaci\u00f3n<\/p>\n\n\n\n<p>En un bowl poner las piezas de salm\u00f3n, sal, pimienta, salsa soja, xaoxing, aceite de s\u00e9samo y el jengibre. Dejar macerar por lo menos un par de horas.<br>Calentar 1C de aceite y fre\u00edr la piel hasta dejarla crocante. Dejar en papel toalla.<br>Colocar las piezas de salm\u00f3n en los palos para brochetas.<br>En una sart\u00e9n antiadherente agregar la otra cuchara de aceite si es necesario, y sellar el salm\u00f3n por ambos lados hasta obtener la cocci\u00f3n deseada.<br>Servir las brochetas en el medio del plato y acomodar la cebolla, el aj\u00ed y las hojas de culantro.
