Serves 6
1/4 cup unbleached all-purpose fl our
3 tablespoons unsalted butter, cut into 1/8-inch cubes
1/2 cup sugar
2 tablespoons fi rmly packed brown sugar
1 teaspoon lightly crushed coriander seeds
3 cups fresh or frozen blueberries
Zest of one lemon, yellow part only
2 tablespoons sugar for sprinkling
Whipped cream or ice cream for topping
Preheat oven to 375°F. Butter a 1 1/2-quart baking dish; set aside. In a food processor, combine flour, butter, and both of the sugars. Pulse gently until mixture resembles cornmeal. Stir in the coriander. In buttered baking dish, combine blueberries, lemon zest, and sugar. Sprinkle fl our mixture over the top. Bake 45 minutes, or until the topping has reached a nice golden brown. Serve warm with a dollop of whipped cream or ice cream.
