Great for parties because it can be made ahead of time, and leftovers can be remolded and frozen! A favorite from my Corpus Christi,Texas, friend, Lillian Murray, an experienced hostess, having spent many years hosting parties at conventions throughout the United States that were held by her family’s insurance company.
Makes 1 Large or 2 Small Balls
6 ounce Roquefort or bleu cheese, at room temperature
10 ounce very sharp, crumbly cheddar cheese, finely grated, at room temperature
12 ounce cream cheese, at room temperature; or dripped plain yogurt
1 small onion, grated
1 tablespoon Worcestershire sauce
1 teaspoon cayenne pepper, or to taste
1½ cup pecans, finely chopped
1½ cups parsley, stemmed and minced
Place cheeses in a large bowl with onion, Worcestershire, and cayenne pepper. Add ½ cup each of nuts and fresh
parsley; reserve remainder. With your hands, blend all thoroughly. NO PROCESSOR! Shape into 1 large or
several small balls; place each in a small bowl lined with plastic or aluminum foil. Refrigerate over night. Before
serving, roll balls in a mixture of remaining parsley and pecans. Serve with unsalted or water crackers.
