Serves 4
Assortment of mixed baby greens (use your favorite)
1 (8-ounce) can sliced beets, drained
2 ounces fresh pea pods, trimmed (1 cup)
1 small red onion, chopped
1/4 cup cracked black pepper
1 sprig fresh dill
1 recipe Red Wine Vinaigrette
To assemble: Line salad plates with assorted greens. Arrange beets, pea pods, and onions atop greens. Sprinkle with black pepper; then pour prepared dressing over top.
