This delicious cheese is expensive to purchase, but now you can beat that price and make it with fewer calories to boot. If
the soy cream cheese or dripped yogurt is used, even more guilt is removed.
Makes 2 ½ cups
2 packages light cream cheese, at room temperature; or Soya Kaas (cream cheese style tofu), or dripped, nonfat yogurt
¼ cup or ½ stick butter, room temperature
2 garlic cloves, peeled and mashed
1½ tablespoons marjoram, chopped
1½ tablespoons fresh chives or green onion, fresh chopped
2 tablespoons fresh basil, chopped
1 teaspoon thyme, fresh if available, chopped
1 tablespoon fresh parsley, chopped
2 teaspoons Aleppo pepper or ½ teaspoon cayenne
Salt and freshly ground black pepper to taste
Place cheese and butter in bowl of a food processor; pulse until smooth. Add garlic; mix well. Add chopped herbs and salt and peppers; mix well. Chill slightly. Form into logs. Wrap tightly in plastic wrap; refrigerate or freeze.
Serve at room temperature with toasted French bread, melba toast, or a favorite snack cracker. Corn chips are not recommended.
