Serves 4–6
4 to 6 loin pork chops
Salt and freshly ground black pepper to taste
1 cup washed and packed fresh coriander leaves
4 scallions, chopped
2 cloves garlic, minced
2 tablespoons white vinegar
3 tablespoons unsalted raw pumpkin or sunfl ower seeds
1 tablespoon olive oil
Salt and freshly ground black pepper, to taste
Preheat grill or broiler. Salt and pepper the pork chops and grill until the internal temperature reaches 165°F. Prepare the chutney while the chops are cooking by combining remaining ingredients in food processor or a blender. Whirl gently until you have a coarse paste. Serve at once, as it will tend to separate. You could also use this to spice up the fl avor of a
bland soup.
