Serves 4
3 large avocados, halved, pitted, separated from peel
Zest and freshly squeezed juice of 2 limes
2 green onions, minced
2 cloves garlic, minced
1 small can green chiles, minced
3 tablespoons minced fresh cilantro
3 tablespoons minced fresh fl at-leaf parsley
1/2 cup sour cream
Put the avocado and lime juice in a bowl and mash with a masher or fork until smooth. The lime juice is to keep the avocado from turning brown.
Add remaining ingredients except for sour cream and mix well. Fold in sour cream and blend until very smooth. Refrigerate for 2 hours before serving. Serve with your favorite chips.
