A tasty appetizer that can be prepared ahead, sealed in bags, and frozen until just before serving.
Makes About 24
2 8-ounce packages cream cheese, low-fat will work or dripped yogurt
1 cup mayonnaise, Hellmann’s® recommended (try the light)
1 tablespoon onion, grated
¼ cup fresh chives or green onion tops, minced
1 cup bleu cheese, crumbled
½ teaspoon cayenne pepper
1 loaf whole wheat or multi-grain bread, thinly sliced
Paprika for garnish
In a medium bowl or a food processor, place cream cheese and mayonnaise; mix well. Stir in onion, chives, bleu
cheese, and cayenne. Set aside. Remove crust from bread slices (you may prefer to leave crusts on); cut in squares,
or use a small cookie cutter to cut into rounds. Spread 1 tablespoon of cheese mixture on each piece. Place filled squares on a baking sheet; cover and freeze until ready to prepare.When ready to serve, preheat oven to 350ºF. Remove baking sheet from freezer and unwrap; place frozen puffs in oven. Bake 15 minutes. Garnish with paprika.
Provide a spreader. Serve immediately along with Red Pepper Ajvar (see recipe P. 148). Pakistani Mango Chutney
(see recipe P. 188) is also good on the puffs.
NOTE: to keep frozen for later use, remove frozen squares from baking sheet and seal in freezer bags.
