Makes 3 Servings
Leaf lettuce
1 grapefruit, peeled and sectioned (Ruby or pink preferred)
1 avocado, peeled and sliced
1 small, red Bell Pepper, seeded and sliced in thin rings
Zesty Poppy Seed Dressing or Creamy Serrano Dressing
On each chilled salad plate prepare a bed of lettuce.Alternate overlapping slices of grapefruit, Bell Pepper, and avocado. Drizzle generously with dressing and serve.
